Ingredients for 4 people

  • Shelled Scallops 8
  • Caviar 50 g
  • Fresh peas 200 g
  • EVO oil
  • Salt


  • Heat some oil in a saucepan and add the fresh peas
  • Season to taste, cover with a little water and cook for a couple of minutes
  • Cut the scallop into carpaccio and place in the dish
  • Remove some of the water from the peas and blend with an immersion blender and emulsify with some evo oil
  • Pass through a sieve to obtain a smooth cream
  • Season the scallop with salt and pepper
  • Add the cream to the dish
  • Top with caviar
