Risotto with Castelmagno cheese and herbs

Ingredients for 4 people

  • Carnaroli Rice 280 g
  • Castelmagno Cheese 60 g
  • Butter 60 g
  • Vegetable stock
  • Aromatic herbs
  • EVO Oil
  • Salt


  • Toast the rice in a saucepan
  • Deglaze with wine and cover with broth
  • Grate 60 g of Castelmagno cheese
  • Blend the herbs and oil with a minipimer until creamy
  • Once cooked, remove the rice from the heat and stir in the cheese and butter
