How to make soft boiled egg | CAVIAR POTATO MOUSSE AND SOFT BOILED EGG

Ingredients for 4 people

  • Baikal Caviar 50 g
  • Potatoes 250 g
  • Cream 75 ml
  • Potaotes cooking water 100 ml
  • Extra Virgin Olive Oil 70 g
  • Eggs 4

Method

  • Cook potatoes in water without skin
  • Blend potatoes, cream, cooking water and evo oil with a blender
  • Cook eggs for 5 minutes from when water comes to a boil
  • Fill siphon with potato cream, load with two capsules and shake
  • Cool the egg in ice and water and then peel
  • Open the can of caviar and serve
