In 2011, Senén González achieved his goal of opening the company "La Cocina de Senén", founded with one goal: to take the most famous products of Sagartoki Restaurant all over the world. Sagartoki Restaurant was awarded as the best pintxos and tapas bar in Spain between 2005 and 2009 thanks to its innovative character and Senén's passion for fusion cuisine full of colors, flavors and delicious combinations.

With the critical eye of the chef and especially knowing the needs of professional kitchens, Senén started from the most important thing, the choice of raw material. From the Alavesa Monalisa potato, to the Basque eggs, passing through the oil used in the preparations and even the bread with which the croquettes are made: everything passes through strict quality controls and all raw material is 0 km.

With Mediterranean sushi, Senén has been able to combine in a dish of Japanese origin, the typical flavors of Spain and its region, the Basque Country. A healthy and innovative product that offers an infinite range of applications: from sushi to crispy compositions and even fresh pasta.

Method of Use

- Sushi Cut the foil in half crosswise and place the shiny side upwards. The foil will moisten in contact with the rice. Wet the end of the foil to glue and close the roll.

- Vegetable paste Spray some water on the surface of the foil so that it becomes sticky and wait a few moments before separating it. Glue two foils together on the shiny side for extra thickness. Cut the joined foils to give it the shape of the desired vegetable pasta (spaghetti, noodles, lasagna, etc) IMPORTANT do not bake.

- Filled Pasta Sprinkle some water on the surface of the foil so that it becomes sticky and wait a few minutes before separating it. Low moisture fillings are recommended. The heat and moisture of the sauces used will ensure the desired consistency. IMPORTANT: Do not bake.

- Frying Place the foil in the deep fryer at 170°C for 5 to 10 seconds, dry quickly with paper towels, shape into the desired shape immediately afterwards and wait for it to cool.

- Oven Spray oil on the foil and place it in the oven 105-150°C for 5-10 seconds, shape the foil just out of the oven into the desired shape and wait for it to cool.
