Soft cheese, the best one to enjoy fresh

Soft cheeses are among the favorite Italian cheeses because they are ripened for a short period of time before being drained and turned into molds. Their rind is also soft and the best way to enjoy them is by spreading on a bread slice or with breadsticks. Italians always suggest to never heat them because they will lose all their exceptional flavor.

Soft cheeses are divided into two categories according to the characteristics of the rind: some of them are covered with a thin layer of a white mold like Taleggio cheese or Robiola, and the interior-ripened soft cheeses like Gorgonzola cheese, Sancarlone and every blue cheese.

There are lots of very different styles of cheese out on the market, Longino & Cardenal wants to offer you only the best to make you experience an amazing charcuterie board with cheese during your dinner or parties. Our selection is rich, we have different types of Italian cheese and French delicacies.

What is a soft cheese?

Soft cheese is made with the combination of milk proteins and moulds, this is the reason behind the 30% of fat content. This delicious cheese is ripened for no longer than one month and it has a higher moisture content, to prevent it from drying out.

Different examples of soft cheeses around the world

Because of Longino & Cardenal origin, our catalog is rich in Italian cheeses of different types of milk: from burrata which can be considered as the king of cheeses, to fresh pecorino to season all pasta dishes with a great taste. Pecorino cheese is made with sheep milk, like many authentic Italian cheeses.

Other styles of semi-soft cheese can have a washed rind such as the taleggio which is very buttery and with an intense flavor, the rind is edible, but the rich taste is appreciated only by the true connoisseurs because of the pungency. The interior of washed-rind cheeses is quite dense.

Soft and fresh cheeses are luxurious and comforting because of the creamy texture and mild, tangy taste. The creamy cheese is perfect to eat as a snack or spread on a cracker, with some chives to decorate the dish. If you're looking for the best cheese for your caprese salad, that will be for sure the famous mozzarella di bufala, season it with a drizzle of olive oil and some black pepper to make it even more delicious.
