PDO Roccaverano Robiola Cheese 2 kg
In the area around the Piedmontese town of Roccaverano, in the Langhe region, a robiola is also produced from a mix of goat's milk (50% minimum), sheep and cow's milk from the dairy, the only one available during the winter months, when the goat almost ceases to produce milk: a version accepted by the regulations and which is accompanied by the more traditional, although both hold the PDO, 100% goat's milk version. It is also eaten fresh, but its flavor is enhanced by aging for more than a month.
