Roccaverano Robiola Cheese
In the area around the Piedmontese municipality of Roccaverano, in the Langhe, a fresh soft cheese made from 100% goat's milk, raw and skimmed is produced: Robiola di Roccaverano DOP.
This cheese is made from the raw milk of goats of the Roccaverano and Camosciata Alpina breeds and their crosses.

Chef's Advice
This cheese displays a soft but rather firm ivory paste. Its slightly acidic flavor is enhanced when paired with fruity white wines, pale ales, orange marmalade, pumpkin and ginger jam, fresh fruit, nut or grape bread.

When great-grandfather Luigi Guffanti began aging Gorgonzola in 1876, his genius intuition was the purchase of an abandoned silver mine in Valganna, in the province of Varese.
