The Nardin Company, for more than 100 years, has been a reference point for the Basque fish market: the great-great-grandfather of Mila Oliveri-who, together with her husband Sebastian, founded the Conservas Nardín company 25 years ago-started out from Sicily, specifically from Sciacca in the province of Agrigento, to teach the Spaniards the art of salting anchovies.
Cantabrian anchovies
It is known worldwide that the best quality anchovies come from the Cantabrian coast. The local raw material is fished using sustainable methods and handcrafted using manual processes. Conservas Nardín's anchovies are among the products elected to excellence by international gastronomy. Cantabrian anchovies are distinguished by a delicate and refined flavor and by the quality of the raw material, used of good size and always first choice. The preparation method is the traditional one brought to the Basque Country at the beginning of the 20th century by Sicilian fishermen.
The company today
Today, Conservas Nardín is a tribute to Mila's grandfather, Leonardo, whom everyone affectionately knew by the diminutive Nardín. Conservas Nardín's product range is wide and differentiated, in traditional oiled, smoked, or marinated versions, and also includes mackerel. The smoking of anchovies is done with native wood, to offer a product that meets higher quality standards. The company's mission is to offer the best product by creating an interesting gastronomic culture for both chefs and the end consumer, promoting a healthy lifestyle.
