Caramote Prawns, also called "Imperial Shrimp," are delicious and beloved crustaceans because of their delicate flavor. A treasure of Italian sea with lots of nutritional properties (phosphorus, calcium, iron and B vitamins) and with an unmistakable taste: just seared over an open flame (1 minute per side) it finds its maximum expression.
In 1-kg packages, these extra extra large caramote prawns are about 20/22 per tray.
What makes Caramote Prawns special?
The Penaeus shrimp is a medium-sized crustacean native to the Mediterranean Sea: it is characterized by white, firm flesh and beautiful blue hues on the carapace (the shell that lines the crustaceans).

Depending on market availability, red shrimp could be sourced from vessels not flying the Italian flag, but still fished in the Ionian Sea FAO Zone 37.2.2 and processed in Mazara del Vallo plants.

Founded in 2014, Don Gambero is a dynamic fish company in Mazara del Vallo, in Sicily, that has inherited a long tradition of sailors and fishermen in the temple of Red Prawn, also known as Ammaru Russu.
