Spicy Extra PDO Gorgonzola Kg 1,5
Gorgonzola is Guffanti's trademark and this is where the family's entrepreneurial adventure began: in fact, the founder Luigi, in 1876, bought an abandoned silver mine in Valganna, in the province of Varese, just to start refining the Gorgonzola he bought from his producer friends.
There are two variants of Gorgonzola: the best known Gorgonzola Dolce, soft and creamy, and "Spicy" Gorgonzola, with a more consistent texture and more pungent to the palate, which is aged for at least 90 days.

As it often happens, also for Gorgonzola - which was granted the Denomination of Origin in 1955 - the legend tells that it is the result of a mistake: it seems that a cheesemaker in love, in order to visit his beloved, forgot a curd in the boiler for the whole night. The following morning the cheesemaker mixed the "forgotten" curd with the morning's work and thus was born another great classic of the Italian cheese making tradition: the shapes obtained in this way, since the paste of the night before, more acidic, did not perfectly mix with the morning's paste, were rich in folds and interstices, which during the aging process favored the development of molds inside the cheese.
Over the years, the Guffanti family has specialized in the selection, aging and refining of the best Italian and international dairy products: the experience gained with Gorgonzola, which remains the trademark, has gradually been transferred to all other types of cheese. After 5 generations, the attention to the artisan quality of the cheese product and the passion for an accurate refinement continue to characterize the Guffanti-Fiori family, consolidated to this day as one of the best refiners in the world.
