Sicilian Red Prawn - Shelled
The Red Shrimp of Don Gambero lives at a depth of about 700 meters where the strong sea currents contribute to make the meat nice and compact while the high evaporation that the Mediterranean Sea undergoes in the hot season, enrich them with those mineral salts that give them an unmistakable flavor.
Historically the symbol of an entire community, Mazara del Vallo, honored all over the world as an Italian excellence with a refined, sweet and delicate flavor.
Ammaru Russu also stands out for its low calorie content and its high iodine content: a mineral that helps the proper functioning of our metabolism and regulates our energy level.
Like all Don Gambero products, as soon as it is fished, it is cut down in the certified laboratories of the fishing boats with a very high thermal shock: the processing is carried out quickly without rinsing or glazing in order to maintain all the freshness of the product. The shrimps are then packaged in special trays that guarantee unchanged structure, flavor, aroma and nutritional values.
The convenience of Don Gambero's "Pronti all'Uso" range: to defrost the product, only about ten minutes in cold water is needed, after which it is sufficient to extract the shelled pink shrimp which will have maintained all their freshness.
Founded in 2014, Don Gambero is a dynamic fish company in Mazara del Vallo that has inherited a long tradition of sailors and fishermen in the temple of Ammaru Russu.
Not only Red Shrimp in various versions (whole, tails only and in tartare) but many other products frozen on board, selected and expertly processed: the best catch of the Egadi, Sciacca, Trapani and Mazara del Vallo.

Depending on market availability, the supply of red shrimp could come from ships not flying the Italian flag, but still fished in the Ionian Sea FAO Zone 37.2.2 and processed in the plants of Mazara del Vallo.
