Sea Urchin, uni in Japanese, is a real delicacy, sought after by connoisseurs for its unique flavor and delicate taste of the sea, much appreciated for creating special appetizers or for enriching sauces, such as a mayonnaise.
Many describe sea urchin as "umami" which is the sixth flavor, a sensation highly cherished in Japanese cuisine. Sea urchins have a unique texture that is firm but melts in the mouth, offering a creamy sweetness.

What makes Mediterranean urchins special?
The urchin is a typical Mediterranean seafood, characterized by long spines that cover the entire circumference of its body; also found in very shallow waters, it can be found on rocks or in posidonia meadows, the seaweed on which it feeds and whose shade it takes advantage of.
Once opened, the sea urchin reveals 5 red or orange gonads that make up the very tasty flesh. Only the female is edible, which can be distinguished from the male by the purple highlights on its spines.

Depending on market availability, red shrimp could be sourced from vessels not flying the Italian flag, but still fished in the Ionian Sea FAO Zone 37.2.2 and processed in Mazara del Vallo plants.
