San Secondo Pork Shoulder
Spalla cotta di San Secondo (San Secondo cooked pork shoulder) is a delicious traditional cured meat from Parma, produced in limited quantities in a restricted area of the Parma.
This typical cured meat from Parma, already appreciated in Roman times, was one of Giuseppe Verdi's favorite cured meats.
What makes the Spalla Cotta special?
The spalla cotta (cooked shoulder) is the front leg of the pig, from which, after careful salting, the shoulder blade is removed, primed and tied.
After 4/5 days in the dripping cellar, the shoulder is ready to be cooked, which is still done as in the past, in steel pots for about 13/14 hours.
The difference between Spalla cotta di San Secondo and cooked ham is not only in the cut of meat but especially in the processing.
Spalla cotta di San Secondo is still made by hand; salting is done manually (not by syringing) by spreading salt around the piece of meat, by massaging and resting the salt slowly penetrates.

A small workshop in Diolo di Soragna where everything the pig has to offer is produced. The artisanal production process strictly follows the Consortium's specifications and the aging process takes place in humid and ventilated cellars, typical of the Parma lowlands, where it develops unmistakable flavors and aromas.
