Salmon Roe
Salmon roe, also commonly known as Red Caviar, is a food rich in vitamins A, C and D, amino acids, potassium and phosphorus. This type of caviar is characterized by a very bright orange color and a particularly large grain (5 to 6 mm). Characterized by a rich flavor, salmon roe is often used to prepare delectable sushi dishes or as a garnish for refined tartines.
Thanks to their buttery and slightly savory flavor, with rich sea overtones, in Russia salmon roe is served with typical blini pancakes and sour cream.

Chef's advice
Russian Blinis recipe:
- 100 g flour
- 100 g milk
- 60 g cream
- 1 egg
- 5 g yeast
Separate the egg yolk from the white and beat it in a bowl with the milk and cream, then proceed to add the flour and yeast and continue to whisk. Allow the batter to rest for about 1 hour. Add the stiffly beaten egg white to the mixture with a pinch of salt and fold in gently to avoid deflating the batter.
Pour the mixture using a ladle in a hot non-stick pan: cook for a couple of minutes on each side so that they puff-up and brown, then serve the warm blini with 44% crème crue and salmon roe to taste.
