Rubia Gallega tenderloin is dry-aged for 21 days. The Rubia Gallega is the most interesting breed of cattle in the Iberian scene, distinguished by its unique aroma, unobtainable in other meats.
Open the vacuum-packed product 1 or 2 hours in advance so that the meat is oxygenated, its original color is restored and it reaches room temperature, which is optimal for cooking.
We recommend pan cooking "napped" with Beillevaire Salted Butter, seasonal seasonings and added Maldon Salt.
Allow to rest on a grill for a few minutes before serving. Hot dishes are recommended.
