Rubia Gallega's Rib-Eye is dry-aged for 21 days and is one of the tastiest and most sought-after pieces. The piece from which this cut is made is the rib-eye of the bovine, from the sixth to the twelfth rib: the muscles in this rib area are little used during the bovine's life and, as a result, the texture remains soft even after cooking.

A distinctive feature of rib eye is the round of white fat, similar precisely to a bovine eye.

Chef's Advice

Rib-eye is a marbled meat with a significant portion of fat, so the advice is to use a drizzle of oil for the pan or a barbecue lid. A quick sear is all that is needed to fully extrapolate its flavor and appreciate its personality.

What kind of meat is Rubia Gallega?

Rubia Gallega is one of the finest meats in the world.The cattle are between 7 and 20 years old and are raised in the wild, feeding on fresh grass supplemented with dry grass during periods of shortage.

The name Rubia Gallega comes from the coloring of the cows and their origin, namely blond and Galician cows.
