Raw Linguine Pasta
Still today, the ancient and precious machinery of the beginning of the 20th century is followed by the careful and scrupulous control of Cavaliere Giuseppe Cocco. It is his irreplaceable experience that accompanies all the phases of the production process so that all the protein and nutritional qualities of the pasta remain intact, together with its taste, just as they did when he started along the path traced by his grandfather Domenico, in 1944.
The "Master" pasta maker pours the durum wheat semolina into the kneading machine and slowly adds pure spring water until a firm and homogeneous dough is obtained. The dough passes through bronze dies, which give the pasta the roughness necessary to enhance the flavor of our sauces. The rolling machine rolls out the dough and its rollers, like a rolling pin, stretch it to the desired thickness. The pasta takes shape and the most difficult and delicate phase begins: drying at a natural temperature.
It is also from an accurate and studied drying that depends the quality of the pasta, its nutritional properties, its resistance to cooking. This phase is entrusted to the experience and ability of the "Master" pasta maker who decides the arrangement of the pasta on the beech wood frames, the amount of air needed and scrupulously supervises the static dryers.
