The Pink Shrimp-or Pink Glass Shrimp-is fished at 150 mt depth and is a crustacean of small size and very light, almost imperceptible color. Still little known, it is characterized by a very thin shell that protects the crustacean.
Chef's Advice
For frying, just a few steps are needed: after previously thawing the product, dust the shrimp with a mixture of 00 wheat flour and semolina flour, in the same proportions (do not use water). Dip the evenly floured fish in 180°C seed oil and fry for a few minutes, until desired browning.

Depending on market availability, red shrimp could be sourced from vessels not flying the Italian flag, but still fished in the Ionian Sea FAO Zone 37.2.2 and processed in Mazara del Vallo plants.
