Gamberessa – or Pink Glass Shrimp – is caught at a depth of 150 meters and is a crustacean characterized by a small size and a very light color, almost imperceptible (hence its name). Still a little known shrimp variety, it is characterized by a very thin carapace – the armor that protects crustaceans – which renders this type of shrimp perfect for frying it hot seed oil: an exquisite product fried au naturel or battered. Like all Don Gambero products, as soon as they are caught, the seafood is immediately blast chilled directly on board certified fishing vessel laboratories, with a very high thermal shock. In order to maintain the full freshness of the product, the processing is carried out very quickly without rinsing and icing. The shrimp are then packaged in special trays that guarantee the structure, flavor, aroma and nutritional values of the product.

Chef's advice
For perfectly fried seafood, just a few steps are enough: after defrosting the product, lightly and evenly coat the fish in an equal mixture of 00 wheat flour and semolina (do not use water). Place the fish in seed oil heated to 180 °C and fry for a few minutes, until golden brown.

The company
