Pienza Pecorino Cheese Gran Riserva
These are larger wheels of Pecorino di Pienza of the black ("da serbo") type, intended for long aging, reaching and exceeding one year.
Calf rather than kid rennet is used to produce it, which is why it is not as piquant as other types of pecorino. The wheels are aged in oak barrels, which give the cheese hints of grape marc. In addition to its delicious flavor, Pienza pecorino is also prized for its buttery, firm texture.

Chef's Advice
Pair with full-bodied, aged red wines, Spicy pear and quince mostarda. For the bread, best to opt for a Tuscan sciocco which is a bread without any salt, typical of the Tuscan tradition because of the tasty pairings with an intense flavor. It is often served with fresh fruit and honey.
