Pecorino Toscano Fresco PDO is a fresh sheep’s milk cheese characterized by a sweet and delicate flavor: it is produced throughout the Tuscany region, as well as in some municipalities in Umbria – the production, however, is primarily concentrated in the Maremma area. The producer does not subject the cheese to any kind of preventive maturation and it is still fresh when it arrives in Guffanti’s aging cellar: it will remain here for at least 60 days, in order to gain a bit more depth from an organoleptic point of view and in terms of its structure.

The Company
When, in 1876, Luigi Guffanti began to age Gorgonzola, his ingenious intuition led to the purchase of an abandoned silver mine in Valganna, in the province of Varese. The rest is simply history!
