The black garlic
A 100% Made in Italy product, made by a young team of food experts who, after years of study and research on fermented foods, have created rare and precious foods destined for the haute cuisine. Black garlic is produced through a thermal maturation process of PDO Polesano white garlic, without the addition of preservatives or chemical additives. The process is completely natural and takes place in a temperature and humidity controlled environment for about 1 month at temperatures between 50°C and 80°C. This production technique greatly enhances the natural properties of garlic, changing color, flavor and texture, acquiring notes of licorice and soy sauce.
Black garlic is considered a useful superfood to promote the body's well-being due to its antioxidant and antibacterial properties. Scientific studies have shown a considerable increase in the nutritional properties of black garlic compared to common garlic. In addition, the aging process makes it extremely digestible compared to fresh garlic. Black garlic and shallot products represent a new reality that allows exceptional versatility in cooking.
