Italian Black Shallot
The proposal from the young Italian company Umami also offers Cream of Black Shallot, processed with the same thermal maturation techniques used to produce the more famous Black Garlic.
Shallot differs from Black Garlic in that it has a coffee aftertaste and a much more delicate texture. After the maturation process it turns black, acquiring new fragrances and will be able to enhance any creation, from savory to sweet.
How is Umami's black shallot produced?
UMAMI Italian black shallots are produced through a thermal ripening process, without the addition of preservatives or chemical additives. The process is completely natural and takes place in a temperature and humidity controlled environment for about 1 month at temperatures between 50°C and 80°C. This production technique greatly enhances the natural properties of the shallot, changing its color, flavor and texture. In addition, the aging process makes it extremely digestible compared to fresh shallots.
