The Atlantic Red Shrimp Carabinero is the flagship product of Mariscos Calafate, a family-owned fishing company that began operations in 1945. The hallmark of the Carabinero is its color, a bright, shiny red, synonymous with quality and freshness.
The history
The company takes its name from the nickname of the founder of the family business, Nicolás Casas González, El Calafate or master carpenter who dedicated himself to naval work. In 1945 he created the first shipyard specializing in building wooden fishing boats. As of 2017, it is the third generation to carry on the company, which specializes in deep-sea seafood fishing.
Carabinero fishing
The fishing carried out by the boats is artisanal; the crew verifies the quality of each shrimp with meticulous care, to obtain a product of the highest quality and with the least possible manipulation. Respect for the raw material is ensured by minimizing the time from capture to freezing, which is already done on the boat at -45°C. Carabinero is a juicy crustacean, delicate and rich in flavor in the head, a product of the sea that has become famous for its size, in fact it can reach up to 30 cm.
