A juicy crustacean, delicate and full of flavor in the head, a product of the sea that has become famous for its length, in fact it can reach up to 30 cm. The name may create some ambiguity with the Spanish armed forces of the nineteenth century, however the connection with the police really exists. The etymology seems to be linked to the boats of the carabinieri of Maximilian of Hapsburg, known for their bright red color, similar to the chromatism of these superb crustaceans.
In Andalusia it is a very popular and widely used food: from a nutritional point of view, the caloric intake is pretty low, not even 100 calories per 100 grams of product, with little fat and a good quantity of proteins. It also contains minerals, especially iron, phosphor and calcium as well as B group vitamins and Omega.
The carapace is robust, leathery and provided with spines, the swimming appendages are five and the big tail opens like a fan. Obviously, the most distinctive feature is the color, a bright and shiny red, a symptom of quality and freshness!
In Spain they have no doubts, the best way to eat this famous crustacean has few alternatives: raw or seared on the grill and enriched only with oil and salt. However the fame of this crustacean typical of the South of Spain has reached the international stage, and chefs from all over the world have recognized its incredible culinary properties simply to be brought out by cooking it in a non-invasive way in order to appreciate the sweetness of its meat. Mariscos Calafate S.L. was created at the end of December 2017 in Adra (Almería) by the grandchildren of Nicolás Casas González, "El Calafate": it is therefore the third generation of a family business of shipowners and fishermen, specializing in ultra-frozen seafood fishing and its subsequent distribution.
The fishing is almost artisanal through 4 boats, where the crew with meticulous care, selects and obtains shellfish of the highest quality. Respecting as much as possible the raw material and minimizing the time from the capture to the freezing of the shellfish, made on the same boat at temperatures of -45 ° C, then remaining at -20 degrees.
With a history that begins in 1945, the company Mariscos Calafate takes its name from the nickname of the founder of the family business, Nicolás Casas González, "El Calafate" or the master carpenter dedicated to doing naval work.
He created in 1945 the first shipyard in the city of Adra (Almería), in southern Spain, and specialized in the construction of wooden fishing boats. Together with his son, Nicolás Casas Biedma, the shipyard became one of the most important nationally and internationally in the mid-1990s.
