Pacific Amberjack Fillet

In this video recipe we show you how to combine Italiand and Japanese cuisine by making a tataki-style amberjack served with a taggiasca olives and cherry tomato sauce.
Amberjack (Hamachi in Japanese) is a temperate migratory fish belonging to the family "Carangidae" of the group "Perciformes".
Very commonly consumed on Japanese dining tables, this fish inhabits the maritime area of the Japanese archipelago and the East China Sea and is a species that can be found in many seas thanks to its migratory habits.
Thanks to its incredible flavor and the good infiltration of fat, amberjack is a truly exceptional fish that can also be enjoyed with a simple marinade: sashimi, sushi and carpaccio are in fact very popular in restaurants and are often prepared directly in fishmongers.
However, as we are taught by the Nipponese masters, heating or blanching the meat of amberjack is going to improve the umami of the fat inside its meat and for this reason we recommend to quickly blanch the slice of fish and serve it in "Tataki" style, accompanied by your favorite condiment.
