Norway lobsters are among the most loved crustaceans because their white meat, delicate and soft, perfectly match with many types of preparations.
They are distinguished from shrimps because of the presence of two particularly developed frontal claws.
Despite its scientific name - Nephrops norvegicus - is common to langoustines no matter the area where they are fished, Sicilian langoustines are much more fragile than those from colder seas.
For this reason, in order to preserve the raw material and to prevent the claws from breaking, the product is glazed with water: the product will be presented in a block of ice, which can be simply thawed at the moment of preparation. Like all Don Gambero products, as soon as it is fished, it is blast-frozen in the certified laboratories of fishing boats with a very high thermal shock: the processing is carried out quickly without rinsing and without glazing in order to maintain all the freshness of the product.
