A mix of products caught in the Sicilian Channel (FAO Zone 31.7 - 37.2) shot down on board, ready to be cooked in a few simple steps. The selection of the best fish frozen in IQF (individually) and caught according to seasonality, a true exploit of the Sicilian Channel, a mix of fish ideal for stir-fries and soups: red shrimp tails, pink shrimp tails, anchovy fillets, baby squid and cuttlefish.
Chef's Advice
For skillful frying, only a few steps are needed: after first thawing the product, dust the fish with a mixture of 00 wheat flour and semolina flour, in the same proportions (do not use water). Dip the evenly floured fish in 180°C seed oil and fry for a few minutes until desired golden brown.

Depending on market availability, red shrimp could be sourced from vessels not flying the Italian flag, but still fished in the Ionian Sea FAO Zone 37.2.2 and processed in Mazara del Vallo plants.

Founded in 2014, Don Gambero is a dynamic fish company in Mazara del Vallo, in Sicily, that has inherited a long tradition of sailors and fishermen in the temple of Red Prawn, also known as Ammaru Russu.
Not only Red Shrimp in various versions (whole, tails only and in tartare) but many other products frozen on board, selected and expertly processed: the best catch of the Egadi, Sciacca, Trapani and Mazara del Vallo.
