Marine plankton is a fundamental and primary element of Earth's life and plays an essential role in maintaining the well-being and balance of the seas in their complex food chain. Spherification is the result of the innovative molecular cuisine introduced by the great chef Ferran Adrià: in this exquisite version flavored with marine plankton, the spheres will explode in the mouth as soon as they come into contact with the palate, leaving a pleasant and innovative taste sensation.
Two and a half million years ago, when the Earth was one, big ocean, the first microscopic organisms appeared that were able to use sunlight and water for photosynthesis. A process that gave rise to a miracle: the birth of life in our seas. Microalgae, also known as phytoplankton, were the first living organisms on our planet. They enriched the atmosphere with oxygen and slowly evolved into what we now call plants.
Today, they produce almost 50% of Earth’s oxygen and are the basis of the complex food chain in our seas and oceans. They are the source of food for zooplankton (the animal component of the planktonic community), which in turn is the food source for fish and crustaceans.
Scientific studies on phytoplankton have demonstrated the exceptionally high nutritional values associated with this very important part of our ecosystem and its great potential for use in the kitchen.
