PDO Fontina is a raw milk cheese produced in mountain pastures and it is produced with milk coming from pastures located at more than 2000 meters of altitude. About the origin of the name, there are many theories: whether it takes its name from an alpine pasture called Fontin or who instead links it to the village of Fontinaz, Fontina since 1957 is strictly regulated by the Consortium by providing the branding in compliance with the disciplinary.

Guffanti selects only Fontina produced with the milk of the month of August of animals which have grazed exclusively on grass, therefore without integrating in any way the feeding of the cows: the result is a rich and heterogeneous cru with herbaceous and floral notes.

Raw milk is the fundamental element for the production of high quality dairy products. In France it is a real cult, in fact all cheeses in order to have the AOP denomination must necessarily be raw milk. The reason is the link between the cow, the pastures and the artisan art specific to each region.

In fact, raw milk must be processed within a few hours of milking, which means a product that encompasses all the flavor of the production area, thus respecting all strains of lactic acid bacteria, yeasts and molds present in the producer's stables.
