Cuttlefish XXL Size
Among the many existing varieties of cuttlefish, the one common in the Mediterranean Sea is Sepia officinalis. A mollusk of the cephalopod family that is characterized by an inner rather than an outer shell. It has an elongated body surrounded by two undulating fins that almost join at the tip, aiding the animal's movement. The rest of the body consists of two large eyes and eight small tentacles that hide other, longer ones in the center that catch prey.
Individually frozen (IQF) in a 3 kg package, Cuttlefish extra extra large is the biggest size (about 300 g each), equivalent to 10 pieces per tray.
Chef's Advice
Almost the entire cuttlefish is used in cooking with the exception of the eyes. The cooking possibilities are really almost endless (simply grilled or in prolonged preparations over low heat). Compared to squid, they have a stronger seafood flavor.

Depending on market availability, red shrimp could be sourced from vessels not flying the Italian flag, but still fished in the Ionian Sea FAO Zone 37.2.2 and processed in Mazara del Vallo plants.
