Bellota Admiracion Lomito
Lomito is a richer, squat version of one of the most famous sausages in Spanish pork butchery, namely lomo. It is still the pork tenderloin to which salt, paprika and other spices are added, after which it is stuffed into natural casings and cured three or four months in special drying rooms. The outside surface is light red, the inside is bright red and has the typical veins when cut. The Admiracion line is a selection of the best Blázquez patanegras.
What makes Bellota Iberian pork special?
Iberian bellota ham comes from pigs that have been fed exclusively on acorns (bellotas in Spanish) and natural grasses and raised in pastures, in semi-freedom, grazing in fields and exercising like wild animals.
During the "montanera" season, from September to February, the "dehesa" trees produce their fruit, acorns, which the pigs devour with relish.
Acorns are a highly energetic fruit and contain a large amount of oleic acid. This way of feeding the animals makes for the best Iberian hams.
