For more than 50 years, the Tabladillo company has been buying and raising only piglets from the province of Segovia, Spain, making the delicious suckling pig famous all over the world. Founded in 1967 by Laureano Maria, the company became a reference point for Segovia breeders, evolving today into a modern facility where technology in production combines with food safety to offer exceptional meat.
The suckling pigs
All Tabadillo suckling pigs are 100% naturally fed, and the farms are spacious because animal welfare comes first for Tabladillo: an animal that has lived a stress-free life will have more tender and tasty meat. The suckling pig, also known as Cochinillo, is carefully monitored during all life stages, starting as early as the mother, who is healthy, fit and ready to nurse, and its feeding, which is essential because Cochinillo feeds only on mother's milk.
Innovation at the table
The authentic Cochinillo de Segovia has a very clear, almost white rind and a slightly pinkish meat with unmistakable tenderness. A key feature is the inner fat; the outer fat once cooked will be crispy and amber in color. Tabladillo's dedication has brought improved breeding and production processes, combined with a constant desire to innovate with enthusiasm. In fact, Tabladillo has come up with an easy, fast and traditional solution to cook the delicious cochinillo at home as well as at a restaurant.
