Artisanal Panettone "Together" by Alajmo

Panettone Together was born from the idea of combining the best raw materials selected by Longino & Cardenal and putting them at the disposal of the 3 Michelin Star Chef, Massimiliano Alajmo.
The panettone is made with only natural sourdough carried on by 3 generations and is leavened 36 hours giving lightness to the product, the marked holes are the maximum proof of this. An artisanal product without the addition of preservatives, colorants or other additives: an exclusive recipe for our customers in respect of the Milanese tradition.
Panettone ingredients:
- French butter whipped in wooden churns as it once was.
- Eggs from free-range hens with a round, firm yolk, a symptom of a diet rich in vitamins and carbohydrates.
- Candied fresh fruit, selected by trusted farmers and candied respecting the natural timing of the process.
- Madagascar vanilla, harvested when ripe and subjected to heating, maceration and fermentation processes to obtain its dark brown color and sweet, delicate aroma.
Beillevaire Butter.
Beillevaire was founded in 1980 by Pascal and Claudine Beillevaire. They had 50 cows and produced white cheese, unpasteurized cream and unpasteurized butter, products sold in local markets. Now it has 20 cheese stores, 10 food halls and is present in 50 markets a week.
The success and exponential growth from a small company to a major market player have not changed Pascal's mission: in fact, it is the only company in France that processes raw milk and churns butter in wooden churns.
Mountain Eggs.
Mattia and John founded Uova di Montagna in 2016 with the goal of producing the best egg possible while ensuring the highest standards of animal welfare. The breeding method takes inspiration from some of Rudolf Steiner's own principles, who already in the early 1900s envisioned farming and “breeding that respects natural cycles and the ecological balance threatened by both too high an animal concentration and extremely specialized breeding.”
Free-range farming respects the ethological characteristics of the hen animal and accommodates its different needs during all seasons and weather conditions.
Pariani Candied Fruit
Pariani is a family business that started its activity in 2010 with the production of Hazelnut Oil made exclusively with “Piedmont Hazelnuts” I.G.P. Thanks to the immediate success, Mattia Pariani extended his “Research and Excellence” activity with other products, such as dried fruits, flours, candied fruits, essences and much more.
The processing of candied fruits is exclusively artisanal and starts with the best Italian raw materials. After careful selection and washing, the fruit undergoes candying in free air for 7 to 8 days, with only sugar and glucose syrup added.
Vanilla Sambava
The spices are grown by local suppliers whose work is meticulously controlled so as to meet strict quality standards. Sambava Épices offers only the highest quality products that encapsulate the fragrances and essences of the pristine island of Madagascar.
Vanilla pods, which are produced through manual pollination of the flowers, are harvested when ripe and then placed in boiling water for two minutes. To obtain the dark brown color and sweet, delicate aroma, they are then subjected to a process involving heating, steeping and fermentation.
