Mini Eggplant (Perlina)

The pearl eggplant is a variety of eggplant having a sweet taste and a compact pulp: it has a high content of fibers, mineral salts and vitamins. With an elongated and cylindrical shape, it is characterized by its small size (for this reason it can also be called Baby Melanzana) and by a smooth surface, thin skin and violet color.
It can be used for many preparations, and even fried, as opposed to other types of eggplants, it absorbs less oil.
