The Salted Raw Milk Butter is another signature product of the Beillevaire company. The milk is always unpasteurized, sourced from local French cows, and processed in wooden churns. The butter is then blended with salt, another French excellence, the Fleur de Sel from Noirmoutier, harvested in nearby Normandy.
Unlike butter with salt crystals, in this version, the butter is blended with the salt. It is therefore recommended for cooking, but also as a spread, to add an extra touch of flavor.
But why does raw milk butter differ so much from pasteurized butter?
Because it reflects the production territory: raw milk butter changes throughout the year, for example, during the spring-summer period it becomes even tastier and its color intensifies. This is because the dairy cows have the opportunity to graze on fresher, greener grass, making their milk much richer in taste and intensity.

The owner Pascal Beillevaire began his entrepreneurial adventure in the 1980s with the mission of producing true artisanal butter, following his family tradition. He started with village markets and regional events, and success quickly followed. However, the fame and growth of the Beillevaire family business, even internationally, did not change Pascal's mission. In fact, it is still the only company in France that works with raw milk and churns butter in wooden churns. Not only butter production, but also a point of reference for cheese aging, with proprietary caves scattered across the various AOP regions.
